No-bake peanut butter oat energy balls

The 16 year old found a new favorite snack that we are determined to perfect (although this recipe is pretty close to perfect). These peanut butter oat chocolate chip balls (original source AllRecipes) are very tasty, easy to make, and healthy.  Since they are bite sized, they satisfy your need for a quick snack without overdoing it.


Ingredients:

  • 1 cup rolled oats
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/2 cup ground flax seed

  • 1/2 cup crunchy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract


Directions:  Mix, roll and place onto cookie sheet, freeze for aproximately one hour.


Helpful tips:
  • We used all organic ingredients.
  • We freeze and then put them in a container in the fridge.  This allows them to soften a bit.
  • We will try fewer oats next time (maybe even crushing them more) for a less chunky consistency.
  • We used dark chocolate chips.

My baby is 15 today - let's eat cake - Texas chocolate cake

My first born is 15 years old today.  It's hard to believe and, indeed, time goes very quickly.  We jumped into his bed this morning, dogs and all, to sing him happy birthday.  This truly is what teenagers love...not, but he took it in stride.

I slipped on his shoes the other day as I took the dogs out.  He has man feet.  My feet (none too small at size 8) swim in his shoes (size 13).  My baby is grown up. He's not even finished growing. Sigh. I guess this is what they do.

As is our tradition, he has chosen his bday dinner (sushi) and requested his cake - Texas Chocolate.  This recipe is from my mom and was a favorite of mine when I was a kid. Warning: this recipe isn't for the faint of heart.  It's rich, moist, delicious. Rich.  A treat once or twice a year.  Much more than that, I'd recommend consulting your cardiologist.  What's a cake if not a treat?!

Texas Chocolate Cake

cake ingredients:

2 sticks butter (1 cup)
1 c water
1/4 c cocoa
2 c four
2 c sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 c sour cream

Bring to boil butter, water, and cocoa.
Combine dry ingredients - flour, sugar, soda, salt. 
Add hot mixture at once to flour mixture
Lastly add beaten eggs and sour cream.
Mix well.

Pour into greased 9.5 x 13.5 (3 qt) baking dish. 
Bake 350 degrees for 20 minutes or until inserted toothpick comes out clean.
Make icing while cake is backing and frost while warm.

frosting ingredients:
1 stick butter (1/2 cup)
6 tbsp milk
2 tbsp cocoa
1 box powdered sugar (2 cups)
1 tsp vanilla

Bring to boil butter, milk, cocoa. 
Add all at once to powdered sugar.
Add vanilla.
Mix well and pour on warm cake (icing will be runny and ooze into the corners - the best pieces).

Take this easy Sweet Onion Dip to your next potluck or BBQ

We attended two neighborhood parties this weekend. Friday, we went to a Lego themed birthday party (I'll post about it later this week). Saturday, we went to a potluck. I don't know about you, but I always scramble a bit when it comes to bringing a dish to a party. Dishes have to be easy and assuredly likeable by many. For this party I decided to try my good friend Ann's Sweet Onion Dip [She told me she got it from Under the Magnolias: A tasteful tour of Athens]. I knew I loved it but when several people asked me for the recipe at the party (and kept me in their sights 'til I delivered), it decidedly became a keeper (to be placed the alamodestuff blog recipe page).

I've started taking screen snapshots of recipes so I can easily view ingredients from my iPhone at the grocery store.  I tend to write lists and leave them behind.  This was actually a screen shot of my Facebook convo with Ann asking for the recipe. 


Ingredients:

2 c. chopped Vidalla onion - approximately 1 large onion (you can use any sweet onion)
2 c. mayo
2 c. grated Swiss cheese - 1, 8 oz brick
2 dashes Tabasco sauce (or favorite hot sauce)
sprinkle of Parmesan cheese

Mix all together (except the Parmesan cheese), pour into a 9" baking dish (I used a glass pie dish.  Ann uses two smaller baking dishes).  Sprinkle with Parmesan cheese.  Bake at 325 for 20 minutes or until nice and bubbly.  Serve with crackers (or nachos).

This dish was practically licked clean very quickly after I placed it on the party food table.  It got rave reviews, Ann.  YUM!
