No-bake peanut butter oat energy balls

The 16 year old found a new favorite snack that we are determined to perfect (although this recipe is pretty close to perfect). These peanut butter oat chocolate chip balls (original source AllRecipes) are very tasty, easy to make, and healthy.  Since they are bite sized, they satisfy your need for a quick snack without overdoing it.


Ingredients:

  • 1 cup rolled oats
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/2 cup ground flax seed

  • 1/2 cup crunchy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract


Directions:  Mix, roll and place onto cookie sheet, freeze for aproximately one hour.


Helpful tips:
  • We used all organic ingredients.
  • We freeze and then put them in a container in the fridge.  This allows them to soften a bit.
  • We will try fewer oats next time (maybe even crushing them more) for a less chunky consistency.
  • We used dark chocolate chips.
